What height should the Cavitation plate of a Dolphin II outboard be when mounted on a mono hull ?

As a general rule you want to start with the prop shaft at or slightly below the level of the keel. You can fine tune the height and angle after running the boat.

So the cavitation plate doesn't need to be on the water?
Why have one then ? it's just more weight?

Try with the prop hub 1/8" above the line of the keel and angled at 1-2 degrees - with a 700bb and 42 mm prop you may find it help ful to lift it even further up
The cav plate is for scale looks. However it still functions when the prop runs submerged and it tends to prevent aeration.
Model props are such large diameters compared to fullsize craft the cav plate becomes a little redundant.
