Can someone point me to a thread/link that spells out the max. amperage that various connectors can safely handle? Specifically interested in 3.5 and 2 mm gold bullets at the moment but I'm sure others would like toknow about all the common connectors.

don't think there is any standard rating. look at data sheets for specific connectors and you'll see widely varying ratings for seemingly identical products from different manufacturers.

I've seen figures of 20A for 2mm, and (I think) 65A for 3.5mm in a post a while back.

Unfortunately, you can't have a "standard" max amperage rating for connectors without specifiying how hot you're willing to let it become or how much voltage you're willing to have dropped across the connector due to its resistance (robbing you of power).
There are rough accepted values you find find tossed around that do a bit of balancing between size, weight, temperature, voltage drop, etc. Read carefully any info they supply discussing the conditions the connectors are being tested under or being used in. Then decide if those conditions match your possible usage of the connectors well enough to use their current rating.
Otherwise, just use the biggest connector and wiring you possibly can. :)
