The S3155 looks like a great servo... is it supposed to be a "faster" vs. "torquier" version of the S3150?

Looks like a promising replacement for the 10mm thick HS125MG but this German site says the S3155 is actually 10.8mm thick, not 10.0mm. Wonder who is correct?

The S3155 uses the same case as the S3150. It is 10.8mm thick, just like the S3150.
