Hi there,
we use quite a few different foams for planes. I hope the following helps a little and not confuses.
Poly Styrene - This is your common garden type beaded white foam. It is available in a range of densities. Normally only shaped by a knife or hot wire. Brittle and fractures if you bounce the plane (ask me how I know).
Blue Foam or modelling foam - Used in insulation as well but it has very small beads so you can sand it and shape it really easily by hot cutting and other mechanical means. Fantastic for the ability to get a good finish on it. Crumbles and dents fairly easily so it needs a ridgid covering normally.
EPP or Expanded Poly Propylene - used for combat wings or planes you want to bounce of things like rocks, trees, power lines, cars ....... Generally shaped by hot wire but it can sort of be sanded or carved if you have to but it is softer and rebounds into shape.
We also use other foams that go by the handle of Spider Foam, Depron just to name a couple.
BTW It sounds like you want Blue modelling foam
