Hi,
Will the IRF1104L mosfet http://www.datasheetcatalog.com/datasheets_pdf/I/R/F/1/IRF1104L.shtml be suitable for the 12F675 ESC: http://www.designsoft.com.au/ahome/rc/PIC-ESC/ESC.html ?

What motors are you going to use? It all depends on the amp draw of the motors.

It would appear that it would fit the bill, so long as you dont exceed the ratings...this would be subject to the size of motor/prop/cell number

I'd look for something with a lower threshold voltage on the gate, maybe even a logic level mosfet. The mosfet is being driven directly by the PIC, so it will only see the +5V gate drive. To get the on resistance that they've spec'd, you need to have 10V difference between the gate and source leads. See fig 3 of the datasheet.
With 5V drive the on resistance may be a lot more and will seriously reduce your max current sinking capability.
