Does anyone know how sensitive these are to motors/servos noise:-

That's a pretty general question.
A quick estimate is that the unit can respond to less than a .1 gauss change in the magnetic field. That is tiny compared to the stray field around an electric motor - which of course depends on the motor.
Looks like a nice peice of equipment. I'd mount it out on the wing or on top of the rudder.

Yeah, was gonna mount it on the rudder. Thought it was worth asking though.

Accuracy: 3-4 degrees
you can do much better than that, have a look around the honewell site for a reference design.
remember you can calibrate the stray fields around magnetic devices as a dc offset, and you can filter to get rid of ac fields if your only interested in low freq. so its not really a problem.
