I am interested in making some bagged wings and the airfoil software (Profili) just happens to have polar graphs on it. I would like to learn how to interpret these, is ther a book, guide etc you can point me to.

Martin Simons' Model Aircraft Aerodynamics, it's worth the reading.

I've got the fourth edition from Amazon, this year.

Also try Understanding Polars Without Math, A guide to getting the most from polar diagrams by Bill & Bunny (B2) Kuhlman, with Bill Kubiak (http://www.b2streamlines.com/books/UPwoM.html)

Seems to me there was a thread or two way back that explained polar reading complete with some charts. Try some searches within the MS forum.
