Mhz stands for "megahertz". It is a unit of frequency that tells how many times per second something happens. A hertz means that something is happening once per second. A Mega-hertz, then, means that something is happening one million times a second.
So, for example, 30 Mhz means that a wave has 30 million periods in a second.
That's a technical answer. It sounds like what you are really looking for is advice about what radio to buy. The actual frequency isn't that important, but it's usually a good idea to get an FM radio, as opposed to AM.

YEPPERS! But Jim, you forgot to mention something important about selecting AM, FM or PCM/FM....
The metal on metal contact with a lot of RC cars, from busings, bearings, gears, motors, ect. can cause severe errors in your reception of the proper signal to the RX. It is most pronounced in AM ( that is almost how to make an AM signal, haha), and is little seen in FM, while PCM, only listens to the transmitter that is supposed to be talking to it, to put it simply.
On PCM you have almost zero chance of getting "shot down" from somebody else's TX... but if there is a will, there is a way, ya know!
I use FM, and I am very pleased. Only my heli uses PCM.
