I have two models that I just converted to electric. When I mounted the motors, I just eyeballed the thrustline. I tried to give them some right & down thrust. I flew both planes this evening and they flew OK, but both needed quite a bit of right rudder trim. Does that mean I have too much right thrust?

If they're pushers, yes.
If a conventional tractor layout you probably have a warped wing, fin or fuselage if there is already some right-thrust.
You are measuring righththrust looking from the top of the model facing forwards? - motor shaft facing slightly right?

How does the plane fly in a power off glide? Does it still require the right trim?
If it glides straight with power off and minimal rudder trim, then you need more thrust correction.
If it does not glide straight with minimal rudder trim, the plane is bent somewhere. Fix it first. Then work on the thrust line.
