I am in the process of building Mr Darby and am going to install 2 escs, can someone show me a wiring diagram?

It would help to know if the ESC's have a BEC. If the ESCs are BEC equipped, you will need to alter the receiver wire on one of them. The alteration is disconnecting the middle wire (usually red) from the receiver plug.

Are you planning on using two batteries or one. The diagram shows two batteries.

The next question is independent or "twinned".
Independent- each esc plugs into it's own channel on the Rx.
Twinned- use a servo Y connector to plug both esc's into a single channel.

With either a Y-harness, or plugged into individual channels, each non-BEC ESC will see the Rx pack's voltage- 6v in this case.

Note that most ESCs today have BEC. If you don't want to power the Rx from the ESC(s), you'll need to disconnect the (usually) red wire in the ESC lead- the middle wire in all but a few cases. Critical with Mtroniks ESCs... if you leave the BEC in place AND use an Rx pack, the ESC will get all burned and smoky looking, as I found out AFTER reading the Mtroniks instructions.
