When training a student using a buddy box the instructor has all or nothing in the way of control. It seems to me that it would be better if the student was allowed access to one control at a time whilst in the very early flight training phase. In this way he/she could get used to ailerons, say, without the confusion of having to operate throttle and elevator.

What signals go down the buddy lead and how easy would it be to enable a selected channel or maybe channels from the instructors transmitter?

The Multiplex EVO allows you to choose which controls a student can manipulate..
