Use a flat plate for tail surfaces, just sand the leading edge round and the trailing edge sharp. This is enough for most models.

If high performance is a issue you can use Mark Drella's HT airfoils: http://www.charlesriverrc.org/articles/drela-airfoilshop/markdrela-ag-ht-airfoils.htm

In some plane types it is not important. In some plane types the tail airfoils, this is a small question. Depends on size, plane type, and other qualities. In design, all most every thing depends on all most every thing else.

If the model has a fan of some form on the nose then the tail airfoils are not an issue really unless you're trying to do something unique. But if it's a glider where your fuel supply (launch height) is limited and duration is the key goal then a properly airfoiled tail can help by a few %. And in competition a few % is all it takes between winning and mid pack. Same if it's a racer intended for competition use.

So basically a bit more info on the model's design goals would help.
