Does anyone know where I can find some general numbers (Aspect ratio, fuselage length compared to wingspan, tail area, tail aspect ratio, etc.) for a RES for thermal flight? I am thinking about 100" using an E205 and and aspect ratio of 10-11. I just don't know what to use for sizing the fuselage and tail.

Try getting the plans for a Sagitta 900. It's almost exactly what you described.
E205, 100" span, RES, and flies great. You can get the plans from RCM. Here's the link to Sagitta plans.

If you have Works, it has interactive design engines that permit config changes to help finesse design for performance desired.

It depends on wood or carbon. Wood is easy and cheap. Carbon is high (20 x times) strength to weight ratio, high (10 x times) stiffness to weight ratio, high cost, hard to build and hard to do design.
Performance increases with size.
Flying skill depends on results and about ten times more important than design.
