In the most simple form: Rotating (spinning) the tail clockwise or
counterclockwise for 360 degrees or more. Done either by giving full tail
left or full tail right.

Why does it need to be full left or right? I think they're more challenging
when done nice and slow whist trying to keep the heli in one spot.

And they're really called "spot turns" although I've never seen a spot on

I agree that it looks far better when doing a really slow one in each
direction.
That shows skill a lot better.
If you can hover nose in & side on with no problems then a slow piro should
be easy.
Remember to take things one stage at a time.
