Basically it's a question of picking a design and just adding FETs (and possibly extra drivers) until it will handle the current. But do you need brushed or brushless ? They're very different.

Works for me..
Brushed Motor ESC
23 November 2004
This project documents how to build and construct your own Brushed Motor ESC using a Microchip 12F675 PIC and a small number of standard components. Various test systems are also described that allow the investigation of how ESCs function.

As already stated, just add FET's..

You could try a PM to 'hpi'. He has produced a high power car ESC based on the design mentioned above and may be able to share what he did with you (see this post http://www.rcgroups.com/forums/showpost.php?p=2516607&postcount=32 )
Although, as mentioned by everyone else you just need enough FETs (or enough heatsinks on the FETs).

Just remember that the gate capacitance can be an issue when adding lots of FETS, often you will need a better driver than just the pic output.

Hope that helps..
For more power just add more fets..
