I have just finnished reading Harleys mini funtana build (beautiful job) and noticed in the pics that the engine mount was angled to one side (right?).

I also remember hearing about "setting the sidethrust adjustment" in various magazines.

Could someone(s) please explain what this is all about and why the thrust is sideways and not down for example?

Depends on the model, but side thrust and down thrust are quite common.

Side thrust is to counteract the tendency of the model to turn left due to the rotating prop and its wash. Down thrust is, I believe, to achieve a situation where the model doesn't put its nose up when you accelerate and, conversely, put its nose down when you take off the power.

Thanks Abenn, I couldn't quite figure out how the "equal and opposite reaction" rule worked in this instance. I didn't figure on the affect on the wing.

It's often used in trainers and so forth that have excessive incidence.

If you do a search you will find an excessively long and drawn out thread on the subject and whether its necessary or useful or detrimental and so forth.
