Can I use the Futaba GY601 gyro when all the other electric's and Tx are JR?

Yep, no problem at all.
The only issue, is you might have to cut the plastic "Key" lug off the
futaba plugs and shave a bit more of a bevel on the 2 edges ( its obvious
when you look at a futaba or JR plug

And I think futaba have changed theirs to be more in line with the JR setup
(although not for that reason, I'm sure:-)

They have? That's news to me. Of course, I haven't bought any new Futaba
equipment recently. Everything I've got still has the "keyed" servo
connectors. Thirty seconds with an exacto knife cures that problem. :-)

Nor me, but it's what I heard. could be total bollocks though, coz I didn't
check-)
