Model Aircraft Aerodynamics by Martin Simons is excellent. It's got good stuff on theory, plus lots of good practical stuff, and it's written by an aussie!!

Got my copy from Amazon.

Here is a good site that deals with theory fairly well:

http://www.ae.su.oz.au/aero/contents.html

also nassa has a site:

Nobody knows how airplanes fly. Lots of people know why flying works, but nobody knows how flying works.
