Delta trim ?

Do the ailerons and elevator of a delta need to trimmed in the up position
to match the upsweep of the trailing edge ?

They will need to be set to a position that results in the trimmed speed that you require. This position will depend on the C/G location that you have. The C/G location that you have will determine the pitch stability.

So, you should start by putting the C/G where you want it to produce the desired pitch stability. Then you should trim the elevators and ailerons to give level flight at the speed you require. Depending on what airfoil you have, the final position should be slightly reflexed, to match the general up-swept shape of the airfoil.
