my electronic theory knowledge is just above 0, which means none of my appliances flash 12:00. could a small esc like a gws 50's output be used to drive some power transistors for increased amp handeling?

In a word "YES" all you need to do is replace the Fet/or fet's on the esc with a type's of a higher current capability -these may need to be off the esc because of greater size .

You can add external power FETs to increase the power handling of the ESC with a booster:

looking at handeling about 15 amps, 20 peak. how many transistors 1?2?
