I have the RealFlight G2 simulator with the USB Interlink.
When I use it with FMS I set up my controls like this.
The exponential on Nick and Roll help reduce the sensitivity of the controls in the middle. This is nice if you are learning to hover. Crashing alot can be discouraging but keep trying !
BTW most heli pilots don't fly with their thumbs. The really good pilots hold the sticks with their fingers and have complete control.
Develope good habits on the simulator and you will do things instinctively at the field.
