Would "hanging", (installing a fastening device at the cg and then hanging from a beam by string or wire) be an effective means of balancing a delta wing plane?

That would work for anything.. presuming you have the attachment at the c.g. you want...

I find my fingers to be an effective means of balancing delta wing planes (as well as most other planes) :)
Don't make it more difficult that it needs to be :)

Some people use a small "eye" hook at the balance point and do just as you described. I usually use my fingers because I am too lazy to install the hook :-)

I don't mean to make it more complicated, but every chance I get I bend a small piano wire loop and fasten it to the plane at the recomended CofG, then a swivel hook with 20 lb test and hang it from the rafters. When setting the CG I use small pieces of tape to hold my gear.It also works well because you can always come back to the same exact point and make changes relative to that.
