Have you checked the speedo set-up? If it's a one-touch or similar
modern ESC, go through the set-up routine once more (with fully
charged cells in everything); if it's an older type, first adjust the
Neutral pot so that the motor doesn't run with the trigger released,
then adjust the High pot so that it just reaches full speed with the
throttle fully open.
