I'm a model land yacht sailor looking to get closer to the water by sailing
on the sandy beaches. But I'm afraid of getting the servos and radio gear
wet. What do you folks do to protect your gear when you capsize or get wet
under other conditions?

Water tight boxes come to mind. Some servos I do nothing to, and one of them is still running. The boat has been sunk at least once a year.
Tool dip, or Liquid electical tape painted around the servo seams will help. Also if you go the the hardware store, and buy some small "o"-rings to fit around the servo shaft, and then press the servo arm on over it, it will help keep water out.

Some people do no more than stretch a balloon over the reciever.

If a boat does get swamped, open up all the servos to let it dry out. You will be surprised how much water, and how long a servo will hold water. Run rubbing, or denatured alchohol thru the electronics to dilute the water, and promote evaporation.
Then blow it out with canned air and set it aside to dry.
A boat can be running again in two hours on a nice day.
