Just got an Easyfly sim to practice heli flying.
I thought this would be a good training aid before I go ahead and trash £500
of kit!
Is a model as difficult/impossible to hover without sliding around?

Unfortunately, no, it's harder :-))
Actually, sims NEED to be harder than the real thing, or they're not worth
the money (or the time taken to download 'em), but in reality, they're not,
they're slightly easier. For one thing, there's no bottle factor" involved
with sims, whereas there's usually plenty at the field.
By being slightly more difficult it would make the transition to the real
model that much less problematic, so having a little built in instability is
a good thing.
However, they ALL make learning a lot easier than it used to be in "the old
days" when sims didn't exist.
