Just to get my brain calibrated - - a lithium pack of
3s4p means there are 4 parallel groups of 3 cells connected in series,
total of 12 cells - - is that correct??

This is correct. 3 times the voltage of a single cell and 4 times the
capacity of a single cell.

And when you parallel the cells, most are not looking for capacity
but to increase the current supply limits.
If the cell can provide 5C (5 x the capacity) current drain, and you
need 25 amp max, you will need 5 of the 1000maH(1 AH) cells in
parallel.
