I have three 550 electric motors running 3 shafts on one esc in a 48"
pt109. I have been running like that for 2 years. No problems.

If money is no object then have three ESC'S have the centre shaft connected
to the throttle then mix the out side shafts with throttle and rudder and
you can then manover whilst not moving forward, or run all three off of one
ESC as long as the max current of the ESC is not reached you can run them
parallel or in series
