As long as I don't exceed the ESC's current rating, is there any reason why I
can't run multiple motors off a common ESC? Application is a multiprop scale
boat, where I don't need to have different speeds on the three shafts.
Anyone actually doing this?

I have 2 Pitmans on one shaft on one ESC, no problems.

In my 1/96th scale USS Missouri I run 4 shafts, 1 motor per shaft, 1 ESC runs 2 motors on Port side and another runs 2 motors on the Starboard side. This gives me independent control of port and starboard and I can actually steer the boat using the motors. You are right in that as long as you do not exceed the ratings of the ESC you should have no problems.
