Does the Real Flight simulator program (let's say G3 and above) work with an Apple Mac on the latest OS X?
If not, what are some equivalent flight sims, similar to realflight and as good as, that will work with Mac?

There are no high end flight sims as good as PhoenixRC or Realflight which run natively under OS X. However, Intel Macs can run Windows, which then allows you to run any of the PC flight sims on your Mac by just rebooting into Windows.
Do a search of this forum for posts with "mac" in the subject, and you'll find a number of long threads on this topic.

Have you any idea how to go about running windows off mac? I know it's something to do with bootcamp, but that's it!

Yup, Boot Camp is the right thing to search for. The links on this page should get you started.
