With this wash machine motor and its electronics could I somehow program it to run 10 turns forward then 10 turns backwards for a honey filter

What you do is use a microcontroller that you can program to control a ESC for the motor. Then you setup a hall-effect transistor and a magnet for the transistor to sense. The hall effect transistor sends a signal to the microcontroller (MCU) everytime the magnet goes by. Thus the MCU counts the pulses and knows when to change motor directions.
You can't just change directions instantly, you have to slow the motor down wait a split second and then start it up in the opposite direction.

The other thought is to use a windshield wiper and motor. This has a continuous back and forth motion that might work for your purposes too.

Its for the brother in law , he actually has a wiper motor , He wants to do this just with existing electronics, (with the Fisher Paykel stuff) , and I thought no way , too

Well I got to thinking, that if you had a gear drive on the motor so that the final drive wasn't going too fast. You could use a simple mechanical switch setup. At the end of a shaft you have something to push in on a leaf switch. The switches are wired like a stairwell light switch setup with a switch at the top and another at the boom of the stairs. So that you can turn the ligh on with one swtich and turn it off with the other or on again and vice versa. So you adjust it to trip at about ten turns.

Sorry I don't see anything in Fisher Paykel as far as parts that would do this.
