Apparently, there are a number of articles on the methods for reducing
the number of drum rotations on the winch. Can someone please point me in
the right direction??

Thanks

Of COURSE I can't remember the exact site. Try Alan's RC links -
there's more useful and live links there than anywhere I've ever seen.
For RC electronics modification, scroll pretty far down - there's
lots of them.

refer to sub section =
"Servo & TX alterations, calculators, clonepacs, make an ESC or winch, FAQ"
at http://homepages.ihug.co.nz/~atong/
under "Radio Systems, Accessories, Alterations and FAQ"
in need email for further direction.
Trim pots can be added to either the servo or TX.
I recommend amending the TX to avoid voiding warranty/damage to servo. Bonus
in that adjustments can be made while yacht is under way. (Servos with trim
adjustment on the servo are a pain because one has to retrieve model and
fiddle around inside.)
FWIW the 3 & 4 ch Hitec TX, which many here use for yachts and boats, are
sold with the trim pots already fitted to the TX - a great plus not provided
by other manufacturers.
The Hitec Laser 4FM is frequently seen with a ratchet fitted to the second
stick and TX used with power models for twin rudders/engines, or yachts to
operate multiple sails or winch servos.

Modify a $150 transmitter, to keep from voiding the warranty on a $10
servo?!

Sorry to correct you John but your prices (thoughts?) are reversed.- 2ch TX
are only US$10-$20. A winch servo HS725BB is US$49.99. A complete 2ch RC
system with std servos exports at <US$60.00
The 3ch + TX are already fitted with trim pots and perhaps Hitec 2ch sets
may soon be supplied with a trim pot on left stick.
